Two things to consider:
- GParted is integrated in the Live Installer. So, changing that with Gnome Disks is out of the question, especially because of the next remark.
- I see that if you want anything other than ext4, ntfs or fat, you'll need to write the filesystem manually (you need to know the exact name of the filesystem you want to use). That is not very user friendly.
